It’s Blueberry season at any time of the year. There’s no better time however than the Summer to enjoy the freshest blueberry. Here’s one of my family’s favourite Summer desserts.
Ingredients:
- 2 – 3 pounds fresh blueberries, washed and set aside to drain excess water
- 2 Tbsp. lemon juice
- zest of 1 lemon
- 3 Tbsp. white flour
- 1/4 cup white sugar
- 1 tsp. cinnamon (divided)
Wash the blueberries in a colander and drain excess water from them. Put them into a small bowl and gently stir in the lemon juice and zest of one lemon.
In another small bowl, mix the flour , sugar and only 1/2 tsp cinnamon.
Add the blueberries and ensure the berries are lightly coated.
Pour into a 9 X 13 inch baking dish. Set aside.
Topping Ingredients:
- 1 cup white flour
- 1/4 cup white sugar
- 1/3 brown sugar
- 1/8 tsp. salt
- 8 Tbsp. butter, cold and chopped into 1/2 inch cubes
- 1/2 cup quick oats
In a small bowl, combine the flour, white and brown sugars, and the salt.
Add the butter. Use a pastry cutter or a food processor to combine. Add the oatmeal. The mixture will clump together (pea size crumbs).
Sprinkle on the top of the blueberries.
Bake in a preheated 350F oven for 45 minutes or until the crisp is golden brown on top.
My family loves this dessert served warm and topped with ice cream or whipped cream. Enjoy!
