Ukrainian-Style Roasted Root Vegetables

Ukrainian style….the way we love to cook when we have better things to do than be in the kitchen all day!

This is an easy, beginner’s recipe for roasting vegetables.

No experience necessary ~ just delicious !

Ingredients:

5 – 6 cups fresh peeled, sliced and cubed root vegetables (beets, carrots, potatoes, parsnip, celery, onions, etc.)

3 Tbsp. fresh herbs (rosemary, oregano, chives, parsley).  I use whatever herbs I have growing or what I can get fresh at our local market.

1/4 – 1/2 cup olive oil (just enough to lightly coat the vegetables)

Method:

Place all of the sliced and cubed vegetables in a sauce pan and add water just to cover. Set a time and parboil for only 9 minutes. Drain, add to roasting pan. Sprinkle the chopped herbs over the vegetables and pour the olive oil over all.  Stir gently to just coat the vegetables. Roast in a 400F oven for 30 – 35 minutes. Grind some fresh pepper, to taste.
