Chunky Chocolate, Peanut Butter & Oatmeal Cookies 

Ingredients:

1 1/2 cups Peanut Butter (you can use smooth or crunchy types)

1/2 cup softened Butter

2/3 cup Brown Sugar (packed down)

3/4 cup White Sugar

2 large Eggs

1 tsp. Vanilla

3/4 cup White Flour

1 cup Quick Oats

1/2 tsp. Baking Soda

1 cup Chocolate Chips

 

Method:

Preheat your oven to 350*F.

In a bowl, beat the peanut butter and the butter until creamy. Gradually add the two sugars.  Add the vanilla and the eggs one at a time.  Mix to combine.

In a second bowl, combine the flour, oats and the baking soda. Now add the peanut butter mixture from the first bowl and mix until blended.  Stir in the chocolate chips.

Chill the dough in the refrigerator for 15 minutes.  This will firm the dough and make it easier to handle.

Drop by teaspoonful onto the baking sheet and press down just a bit.

Bake 10 – 12 minutes, just until the centers look set and they are just beginning to become a light golden colour on the edges.  Cool 5 minutes in the pans before removing to a wire rack.

Note: It’s a secret….I prepare the baking sheets ahead of time by placing a sheet of parchment paper on the sheets.  The parchment prevents sticking and burning.  Try it but sh!
