Poppy Seed Filling #2

Ingredients:

  • 2 cups poppy seed (ground)
  • 6 egg whites, well beaten
  • Grated rind of 1 lemon
  • 1/2  cup sugar
  • 1 tsp. ground cinnamon

Grind the poppy seed in a grinder.  Add the sugar slowly to the egg whites, until light and frothy. Add the cinnamon and the lemon rind.  Fold in the ground poppy seed.

Let this stand for 2 – 4 hours in your refrigerator.  The egg whites need to be absorbed into the mixture.
