Spring Time Beet Leaf Rolls

Use a basic bread dough for these rolls.  See my Best Homemade Bread Recipe, Ukrainian Style under Traditional Ukrainian Dishes.


  • Young green beet leaves


Wash the beet leaves well, spin dry and allow to sit and wilt a little.

While waiting, spray Pam or grease a cookie sheet with oil.

When your dough is ready, pinch off or cut dough into small bite-size pieces.

Roll the dough by hand and wrap a beet leaf loosely around it.  Place on the greased cookie sheet, side by side.  You only want one layer.  Place in a warm place and let rise, until dough has doubled.  The pan will look full.

Bake in a preheated 325F oven for 25 – 30 minutes.

These rolls can be eaten fresh. Delicious with a cream sauce of thick cream, fried onions and dill.

These rolls also freeze well.
