- 1 cup honey
- 1/2 cup butter
- 1 cup brown sugar
- 6 eggs, separated
- 1 1/2 cups cake flour, sifted
- 2 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 cup milk
Heat the honey in a pan until boiling. Set it aside and let it cool.
Cream the butter and the sugar until light. Add the egg yolks, one at a time, and beat until fluffy. Add the honey and continue beating for one minute.
In another bowl, sift the flour with the dry ingredients. Add to the butter and egg mixture, alternating with the milk a bit at a time until combined.
In a separate bowl, beat the egg whites until stiff, and then gently fold into the batter.
Pour into a buttered cake pan (9″X9″) and bake at 350F. for about 45 minutes. Test for doneness.
